Amaranth

An ancient, tiny pseudocereal seed (*Amaranthus*) that was a staple of the Aztec diet. It has a peppery, deeply earthy flavor and never entirely softens when boiled, retaining a gelatinous, caviar-like crunch that thickens porridges and soups.
