The large, unopened flower bud of a thistle plant (*Cynara cardunculus*). Harvesting the tender, meaty 'heart' requires navigating tough, fibrous outer leaves and a fuzzy 'choke.' They contain cynarin, a unique compound that inhibits sweet receptors on the tongue, making water and subsequently eaten foods taste artificially sweet.
