Breadfruit

A massive, starchy, tropical fruit (*Artocarpus altilis*) related to the jackfruit. When unripe and green, its flesh is hard and starchy, tasting remarkably like freshly baked bread or potatoes when roasted; as it ripens, the starches convert to sugar, becoming soft, sweet, and custard-like.
