Cherry

A small, fleshy drupe (*Prunus avium*) that ranges from bright red and tart to dark mahogany and intensely sweet. Because they retain their structure well when heated, they are versatile in both sweet applications (pies, jams) and savory reductions (pairing classically with duck or pork).
