Dragon Fruit

Also known as pitaya (*Selenicereus undatus*), this striking fruit of a cactus features bright pink or yellow skin with green, leafy scales. Despite its dramatic appearance, its white or magenta flesh offers a very mild, subtly sweet flavor—similar to a cross between a pear and a kiwi—with a crunchy texture from its tiny black seeds.
