Dried Bay Leaves

The dehydrated leaves of the sweet bay tree (*Laurus nobilis*). While fresh bay leaves can be overwhelmingly astringent and menthol-heavy, drying them mellows their bite and concentrates their complex, woody, and floral notes, which release slowly during long braises and stews.
