Dried Cilantro

The dehydrated leaves of the coriander plant (*Coriandrum sativum*). The drying process almost completely destroys the bright, citrusy, and pungent volatile oils that define fresh cilantro, leaving a very subtle, grassy herb that functions mostly as a visual garnish rather than a primary flavoring agent.
