The dehydrated leaves of various *Mentha* species, most commonly spearmint. While it loses the sharp, cooling 'freshness' of raw mint, it develops a deeper, sweeter, and more earthy profile that is absolutely essential for traditional Middle Eastern lamb meatballs (kofta) and yogurt sauces.
