Einkorn

An ancient species of wheat (*Triticum monococcum*), considered the first domesticated wheat in human history. It has a significantly simpler gluten structure than modern wheat (making it easier for some to digest) and offers a profoundly rich, nutty, and slightly sweet flavor when baked into dense, rustic breads.
