Finger Lime

A highly unusual micro-citrus (*Citrus australasica*) native to Australia. When the thin, elongated fruit is cut open, it reveals hundreds of tiny, spherical juice vesicles that resemble caviar; when bitten, they explode with an intense, tart, and floral lime flavor.
