Domesticated waterfowl (*Anser anser domesticus*) with exceptionally rich, dark, iron-heavy flesh and an extraordinary layer of fat that, when rendered, rivals duck fat for roasting potatoes and confiting. A traditional centerpiece of European winter feasts (Christmas goose in Germany, Britain, Scandinavia) whose popularity declined with industrial chicken and turkey but endures in heritage cooking.
