Halibut

Massive flatfish (*Hippoglossus spp.*) found in cold North Pacific and North Atlantic waters, sometimes growing over 300 pounds. Firm, snow-white flesh forms unusually thick, meaty flakes with a clean, sweet, almost buttery flavor. Premium Pacific halibut is MSC-certified and well-managed; Atlantic stocks are critically depleted and should be avoided. Outstanding on the grill, in ceviche, or roasted whole; its firm texture stands up to robust sauces and olive-oil poaching.
