Ultra-high-protein legume (~40% dry protein) from sweet-cultivar Lupinus angustifolius or L. albus, traditionally brined as Mediterranean 'lupini' bean snacks and increasingly milled into flour for gluten-free pastas and meat analogs. Among the most sustainable crops on record — nitrogen-fixing, low-water, and cold-tolerant. Bitter wild varieties contain alkaloids; only sweet cultivars or thoroughly de-bittered beans are food-safe. Allergenic for some (cross-reacts with peanut).
