Pearl Barley

A form of barley (*Hordeum vulgare*) that has been scoured (pearled) to remove both its inedible outer hull and its bran layer. This processing significantly reduces its cooking time and allows it to release massive amounts of viscous starches, perfectly thickening heavy winter beef stews and risottos.
