Rye Berries

The whole, unprocessed grain of rye (*Secale cereale*), containing the bran, germ, and endosperm. They require long soaking and simmering to soften but offer a profoundly chewy, dense texture and a distinctively sour, earthy, and complex flavor that makes an incredibly hearty grain salad.
