Sapote (Mamey)

A football-shaped fruit (*Pouteria sapota*) native to southern Mexico and Central America, its rough brown skin covering dense, salmon-colored flesh. The flavor is rich and low in acid, closer to sweet potato, pumpkin, and almond than to anything tart, and a single large glossy seed sits at the center. Underripe, the flesh is starchy and bland.
