Spelt Berries

The whole, unprocessed grains of an ancient wheat subspecies (*Triticum spelta*). They possess a tough outer hull that must be mechanically removed before cooking, yielding a grain with a satisfying, popping chew and a distinctly sweet, intensely nutty flavor profile that is more complex than standard wheat berries.
