Congee (zhou in Mandarin, jook in Cantonese) is the most elemental and nourishing preparation in the Chinese culinary tradition - a thick, silky rice porridge that is made by cooking rice in a volume of water or broth eight to ten times greater than the rice itself, over a long period, until the grains completely dissolve and surrender their starch into a smooth, flowing, porcelain-white liquid of remarkable soothing power.
