Authentic Cornetto e Cappuccino

    The Sponge. Dissolve the yeast in the warm milk with 1 tsp of sugar. Let sit for 10 minutes until foamy.

    The Dough. In a stand mixer, combine the flour, remaining sugar, zest, and vanilla. Add the yeast mixture and 1 egg. Knead on low until a dough forms.

    Enrich the Dough. While kneading, add the soft butter one tablespoon at a time until completely incorporated. Knead for 10 minutes until the dough is smooth, elastic, and slightly sticky.

    The Cappuccino. While the cornetti cool slightly, pull two shots of espresso into wide cups. the cold whole milk, introducing air aggressively to create a thick, dense, dry foam (not wet microfoam like a latte).

    Pour the milk. Pour the milk over the espresso, holding back the foam with a spoon, then dollop the thick foam heavily on top. Serve immediately with the warm cornetto.
