Som Tam Thai

The Bangkok-style green papaya salad that balances four elemental Thai flavors - hot, sour, salty, sweet - in a single dish assembled with a large ceramic mortar and wooden pestle. Unlike the Isaan version which uses fermented fish sauce and whole crabs, som tam Thai uses regular fish sauce, peanuts, and dried shrimp for a cleaner, more accessible flavor profile. The pounding technique bruises but does not pulverize - the papaya shreds should remain intact but seasoned through and through.

    Using a large clay mortar and wooden pestle, pound the garlic and chilies into a rough paste. This should take about 30 seconds - you want visible pieces, not powder.

    Add the dried shrimp and pound briefly to mix and separate the shrimp into small pieces.

    Add the long bean pieces and pound lightly - three or four strikes to bruise and crack them. They should remain identifiable, not mushy.

Taste and adjust: the balance should be simultaneously tart, savory, hot, and sweet, with no one element dominating. Transfer to a plate and top with crushed peanuts. Serve immediately.
