Authentic Horiatiki (Greek Village Salad)

The quintessential Greek summer salad. 'Horiatiki' means 'village style'. It is defined by what it lacks: there is absolutely no lettuce. It is a crude, rustic amalgamation of sun-ripened tomatoes, crisp cucumbers, and pungent onions, crowned with a massive, unbroken slab of feta and drowned in robust extra virgin olive oil.

    The Base. In a large, shallow bowl, combine the tomato wedges, cucumber half-moons, green pepper rings, and red onion rings.

    Season the vegetables. Sprinkle the sea salt over the vegetables. Toss them gently with your hands. Let them sit for 5 minutes so the salt draws out the tomato juices, creating the 'zoumi' (the highly prized liquid at the bottom of the bowl).
