The honey layer cake that became a national obsession. Ten or more paper-thin honey-infused biscuit layers are stacked with a generous sour cream and condensed milk frosting, then the entire structure is pressed under weight and refrigerated for a full 24 hours. During this rest the biscuits absorb the cream entirely, transforming from rigid discs into a unified, impossibly moist, melting torte that is nothing like its components. The crushed biscuit crumb coating is made from the cake trimmings themselves, completing a recipe with zero waste.

    Make the honey dough. In a heatproof bowl set over a pot of barely water (double boiler), melt together the honey, sugar, and butter, stirring until combined. Add the soda and stir constantly for 2 to 3 minutes ; the mixture will foam vigorously and turn a light amber. Remove from heat. Whisk in the beaten eggs quickly. Let cool to room temperature.

    Stir in the flour gradually until a soft, slightly sticky dough forms. It will be warm and pliable. Wrap and refrigerate for 30 minutes to firm up.

    Make the frosting. Whisk the cold smetana, sifted powdered sugar, and vanilla together until smooth and thick. Refrigerate until needed.
