    Prepare the zabaione base. Place egg yolks and caster sugar in a heatproof bowl set over a pot of barely water, ensuring the bowl does not touch the water. Whisk vigorously and continuously for 8 to 10 minutes until the mixture is pale, thick, and has doubled in volume, reaching the ribbon stage where it falls from the whisk in a slow, thick ribbon.

    Remove the bowl from the heat and continue whisking for another 2 minutes to cool slightly. Transfer to a large clean bowl. Add the mascarpone in three additions, folding gently with a spatula after each addition until the mixture is completely smooth and homogeneous with no white streaks remaining.

    Combine the cooled espresso and Marsala wine in a shallow bowl wide enough to dip the biscuits. Working quickly, dip each Savoiardo biscuit briefly into the espresso mixture, about 1 to 2 seconds per side. The biscuit should be moistened but not waterlogged or it will disintegrate.

    Arrange a single layer of dipped biscuits in a rectangular dish approximately 30x20cm. Spread half of the mascarpone cream over the biscuit layer using an offset spatula, smoothing it to an even thickness. Dust generously and evenly with cocoa powder through a fine sieve.

    Arrange a second layer of espresso-dipped biscuits on top, then spread the remaining mascarpone cream over the surface. Smooth the top completely. Dust with a final, even layer of cocoa powder. Cover tightly with plastic wrap and refrigerate for a minimum of 4 hours , and ideally overnight, to allow the cream to firm and the flavors to meld before serving.
