    Chana. soaked chickpeas with a tea bag, salt, and water until tender. Discard tea bag.

    Bhature Dough. Mix flour, yogurt, powder, sugar, salt, and oil. Knead into a soft dough. Let for 4-6 hours .

    Chole Base. Sauté onions, ginger-garlic paste, and tomato puree. Add Chole Masala and anardana powder. until oil separates.

    Combine. Add chickpeas to the base with some of their cooking water. until the gravy is thick and dark.

    Bhature. Roll dough into large ovals. in very hot oil. Press down with a slotted spoon so they puff up like balloons.

    Serve hot with onions and green chilies.
