Authentic Scallion Pancakes (Cong You Bing)

    The Hot Water Dough. Place the 2 cups of flour in a bowl. Pour the water evenly over the flour while stirring rapidly with chopsticks. It will look shaggy and dry.

    Hydrate. Drizzle in the cold water. Knead by hand for 5 minutes until a smooth, slightly tacky dough forms. Cover with a damp cloth and let rest for 30 minutes to relax completely.

    The Roux (You酥). In a small heatproof bowl, combine the 2 tbsp flour, salt, and five-spice. Heat 2 tbsp of oil until shimmering, then pour it over the flour mixture. It will sizzle. Stir into a smooth paste. This is the lamination fat.

    Roll and Laminate. Divide the rested dough into 4 pieces. Roll one piece out on an oiled surface into a very thin rectangle. Smear a thin layer of the oil roux over the entire surface. Sprinkle heavily with chopped scallions.

    The Coil. Roll the dough up tightly like a cigar (along the long edge) to trap the scallions and oil. Now, take that long rope and coil it in on itself like a snail shell. Tuck the tail end underneath.

    Second Rest. Flatten the snail slightly with your palm. Let it rest for 15 minutes . (If you roll it immediately, the layers will burst and the dough will snap back).

    Flatten. Gently roll the rested coil out into a 6-inch pancake, about 1/4-inch thick.

    . Heat 1 tbsp of oil in a skillet over medium heat. the pancake for 3-4 minutes per side until deeply golden, blistered, and crispy.

    The Fluff. Remove from the pan and use two spatulas (or your hands) to smash the edges inward toward the center to separate and fluff the flaky layers. Serve hot.
