    Cook the rice. Once done, transfer to a large wooden tub (hangiri).

    Fold the vinegar-sugar-salt mixture into the hot rice using a slicing motion with a paddle, while fanning it to cool and create a glossy sheen.

    Wet your hands lightly. Take a small amount of warm rice and form it into a firm but airy oval mound.

    Take a slice of fish in your other hand, dab a minuscule amount of wasabi in the center.
