    Make a simple syrup by dissolving the sugar in 0.5 cup warm water. Stir until completely clear and let cool.

    Blend two-thirds of the diced mango with the lime juice, cooled simple syrup, chile powder, and salt until smooth. Taste and adjust - the base should be slightly sweeter and more intensely flavored than you want the final pop to taste, as freezing dulls sweetness and intensity.

    Fold in the remaining diced mango pieces by hand so that chunks will be visible and provide textural contrast in the finished paletas.

    If using chamoy, drizzle a thin spiral of chamoy inside each ice pop mold. Carefully pour or ladle the mango mixture into the molds, filling to about 5mm below the rim (the mixture expands when it freezes).

    Insert wooden sticks and freeze for at least 6 hours , or overnight until completely solid. To unmold, run warm water over the outside of the mold for 10 to 15 seconds then pull gently. Serve immediately, optionally dipped in additional Tajin and drizzled with chamoy.
