Dolma

Stuffed grape leaves are a monument to patience and precision. Dolma requires individually rolling dozens of small parcels of seasoned rice, herbs, and sometimes meat inside brined grape leaves, then stacking them in tight, concentric circles in a pot so they hold their shape under the pressure of the steaming liquid. The filling must be perfectly calibrated: enough rice to fill but not burst the leaf as the grain expands during cooking. A base of sliced onions and tomatoes lines the pot bottom, serving both as a flavor foundation and a protective barrier against direct heat.

    Make the filling. Combine the raw rinsed rice, ground meat if using, diced onion, chopped parsley and mint, olive oil, allspice, cinnamon, and a generous amount of salt and black pepper. Mix thoroughly with your hands. The filling should be well-seasoned as the grape leaf itself adds no flavor.

    Lay a grape leaf flat on a work surface, shiny-side-down. Place a small, fat cigar of filling (approximately 1 tablespoon) near the stem end. Fold the bottom of the leaf up over the filling, fold in both sides, and then roll tightly away from you. Do not roll too tight; the rice needs room to expand.

    Line the bottom of a heavy pot with sliced tomatoes and a layer of any torn or small grape leaves. This prevents the dolma from scorching.

    Pack the rolled dolma tightly into the pot in a single layer in concentric circles, then stack additional layers on top. Pour the lemon juice and 1.5 cups of water over them. Place a heavy plate on top of the dolma to weigh them down during cooking. Cover the pot.

    The Finish. Bring to a , then reduce to very low heat and for 45 to 55 minutes until the rice is fully cooked. To test, remove one dolma and cut it in half; the rice should be tender throughout. Let rest for 10 minutes before removing the plate. Serve at room temperature with yogurt and lemon wedges.
