Khao Niao Mamuang

The most beloved dessert in Thailand and a masterpiece of textural and flavor contrast. Glutinous sticky rice is steamed until tender, then soaked in a warm, salted coconut cream sauce that penetrates each grain. It is served alongside perfectly ripe, fragrant Ataulfo or Nam Dok Mai mangoes, with an additional drizzle of rich coconut cream and a garnish of toasted mung beans.

    Soak and the Rice. Drain the soaked glutinous rice. Line a steamer basket with cheesecloth or a clean cloth. Spread the rice in an even layer. If using pandan leaves, tuck them amongst the rice. over vigorously water for 20-25 minutes until the grains are completely tender, chewy, and translucent.

    The Coconut Soaking Sauce. While the rice steams, combine 300ml of the coconut milk, 3 tablespoons of sugar, and 0.5 teaspoon of salt in a small saucepan. Heat over medium-low heat, stirring constantly, until the sugar and salt are fully dissolved. Do not . Remove from heat immediately.

    The Absorption. Transfer the hot, freshly sticky rice to a wide mixing bowl. Immediately pour the warm coconut soaking sauce over the rice. Fold gently to combine. Cover the bowl tightly with plastic wrap and allow to rest for at least 15 minutes . The rice will absorb the majority of the sauce and become glossy and rich.

    The Coconut Topping Cream. In the same small saucepan, combine the remaining 100ml of coconut milk, 1 tablespoon of sugar, and 0.5 teaspoon of salt. Heat gently, whisking until dissolved. This should be pourable and slightly thicker than the soaking sauce.

    Plate and Serve. Mound a generous portion of the warm, glossy sticky rice on each plate. Fan the sliced mango alongside or over the rice. Drizzle the coconut topping cream generously over both the rice and the mango. Finish with a scattering of toasted mung beans for textural contrast.
