Pure sodium bicarbonate, a chemical base that requires the addition of an acidic ingredient (like buttermilk, yogurt, or lemon juice) to react and produce carbon dioxide gas. In addition to leavening, it dramatically accelerates browning (the Maillard reaction) by raising the pH of the batter.
