The thick, high-fat layer that separates and rises in canned coconut milk, sold concentrated on its own. Roughly 24-30% fat, far richer than coconut milk — used for whipping into dairy-free 'whipped cream', enriching curries, finishing soups, and stabilizing dairy-free ice creams. Solidifies when chilled; warms back to pourable.
