    The Stock. the beef brisket with dried anchovies, a piece of kelp, and a halved onion in 7 cups of water for 30 minutes . Remove the brisket; shred it thinly by hand. Strain the broth through a fine sieve; it should be completely clear and golden.

    The Egg Garnish. Separate 2 eggs into yolks and whites. Cook each separately in a lightly oiled pan into thin, flat sheets. Stack and cut both into thin ribbons (jidan). Set aside.
