Kimbap

The essential Korean portable meal: seasoned short-grain rice and a colorful matrix of fillings are rolled tightly in sheets of roasted seaweed (gim) and sliced into perfect cross-sections that reveal a geometric mosaic of colors.     The Fillings. Prepare each component individually: cook the bulgogi; blanch and season the spinach; julienne and briefly the carrots; the eggs into thin sheets and slice into strips. Lay all components out on a board.

    The Rice Layer. Place a bamboo rolling mat on the counter. Lay one sheet of gim, shiny side down. With wet hands, spread approximately 0.75 cup of seasoned rice evenly over the gim, leaving a 1-inch border at the far edge.

    The Fillings Line. Across the near end of the rice (one-third of the way in), lay a strip of each filling in a horizontal line: beef, spinach, carrot, egg, and danmuji from edge to edge.

    The Roll. Using the bamboo mat, fold the near edge of the gim tightly over the fillings and roll forward firmly, pressing to compact the cylinder. Use the bare border of gim to seal the roll. Roll should be firm but not crushed.

    The Slice. Brush the outside of the roll with sesame oil. Using a sharp, damp knife, slice the roll into 8-10 pieces with confident, single-stroke cuts. The cross-section should reveal a perfect spiral of colors.
