    Prep the peas. Blanch the peas in water for 2 minutes . Transfer half to a blender with a splash of water and puree until smooth. Set both the puree and whole peas aside.

    Prep the lamb. Rub the lamb chops with olive oil, salt, and pepper. Let them sit at room temperature while making the risotto.

    Start the Risotto. In a wide, heavy-bottomed pan, heat 1 tbsp olive oil over medium heat. Add the minced shallot and cook until translucent (3 minutes ).

    Toast the rice. Add the Arborio rice to the pan. Stir constantly for 2 minutes until the edges of the grains become translucent (tostatura).

    Deglaze. Pour in the white wine. Stir until the liquid is almost completely absorbed.

    The Ladle and Stir. Add the hot stock one ladleful (about 1/2 cup) at a time. Stir continuously and vigorously. Wait until the liquid is mostly absorbed before adding the next ladle. This process takes exactly 18-20 minutes .

    Serve immediately. The risotto should spread slightly on the plate. Top with the rested lamb chops and a sprinkle of fresh mint.
