    Drain the soaked chickpeas and place them in a large pot. Cover with fresh cold water by at least 3 inches. Bring to a vigorous , skimming any foam that rises. Reduce heat and for 60 to 90 minutes until the chickpeas are so tender they can be crushed effortlessly between two fingers.

    Reserve 1 cup of the hot cooking liquid. Drain the chickpeas. Set aside a small handful of whole cooked chickpeas for garnishing.

    While the chickpeas are still hot, transfer them to a high-powered food processor. Process for 2 full minutes without adding anything until a thick, slightly grainy paste forms.

    Add the raw tahini, raw garlic, lemon juice, and salt to the processor. Continue blending for another 2 minutes as the mixture becomes pale and stiff.

    The Finish. With the processor running continuously, drizzle in the ice water a tablespoon at a time over the next 2 to 3 minutes . Watch the hummus transform from dense and beige to light, almost white, and impossibly silky. Taste and adjust seasoning. Serve on a wide plate, swirled into a crater, filled with olive oil, whole chickpeas, and a dusting of paprika.
