Lentil Soup (Shorbat Adas)

The definitive soup of the Arab world. Shorbat Adas is a deeply comforting, velvety red lentil soup that uses minimal ingredients to achieve maximum depth. Red lentils are used precisely because they dissolve completely into a smooth, homogeneous liquid upon cooking, requiring no blending. The elemental alchemy involves the complete dissolution of legume cellular structure into a warm, golden, cumin-scented liquid. A final drizzle of lemon juice right before serving cuts through the richness and brightens the entire bowl.
