Pad Kra Pao

Thailand's most popular workday lunch - a blazingly fast stir-fry of minced or ground pork (or chicken) with garlic, bird eye chilies, and holy basil (kra pao), sauced with fish sauce, oyster sauce, and a touch of sugar. Served over rice and crowned with a kai dao (Thai fried egg) with crispy, lacy edges and a runny yolk. The key is maximum heat and holy basil added at the very end with the heat off - not sweet Thai basil, which has a completely different character. This dish defines the energy of Bangkok street food.

    Mix the oyster sauce, fish sauce, soy sauces, and sugar together in a small bowl to create the sauce. Have all ingredients prepped and within reach - this cooks in under 5 minutes .
