📝Instructions

Highlighted techniques open a deep-dive. Time phrases include a built-in timer.

  1. 1

The Base. In the bottom of a wide bowl, arrange the chosen heavy toppings (sweet red beans, jellies, corn).

  2. 2

The Mountain. Shave the ice directly over the toppings, forming a high, structured mountain. The ice must be fine enough to absorb syrup but granular enough not to instantly melt.

  3. 3

The Saturation. Vigorously drench the ice mountain with the brightly colored, floral syrup. The ice will instantly absorb the color.

  4. 4

The Emulsion. Pour the evaporated milk and a heavy drizzle of sweetened condensed milk over the top. The milk will streak down the sides, creating a visual marbling effect.

  5. 5

The Collapse. Serve immediately with a spoon. As it is eaten, the ice collapses into the sweet milks and toppings, creating a cold, slushy soup.
