Authentic Hyderabadi Biryani

The 'Kacchi' method of biryani construction. Raw, marinated meat is layered with 70% cooked long-grain basmati rice in a heavy pot, sealed with a flour dough (Dum), and cooked over slow heat. The meat steams in its own juices while the rice absorbs the rising aromatic steam, creating a perfect vertical stratification of flavor.

    (Raw). Mix raw meat with yogurt, ginger-garlic paste, birista, mint, cilantro, salt, and spices. for at least 4 hours (overnight for goat).

    Parboil Rice. rice in salted water with whole spices until only 70% cooked (grain should have a firm core). Drain.

    Layering. In a heavy bottomed pot, layer the raw meat at the bottom. Spread the parboiled rice over the meat.

    Garnish. Drizzle saffron milk and ghee over the rice. Add more mint and birista.

    The Dum (Seal). Seal the pot lid with a long rope of dough (wheat flour and water).

    Cook. Cook on high for 15 mins , then place the pot on a tawa (griddle) and cook on lowest heat for 45 mins . The trapped inside is the alchemy.

    Serve. Break the seal. Scoop from the bottom to get both meat and fragrant rice. Serve with Salan and Raita.
