Biryani

Biryani is the most celebrated and technically demanding rice dish in South Asian cuisine - a layered masterpiece of the Mughal court that requires separate preparation of the meat and rice, which are then assembled in alternating layers and sealed with dough or cloth before final slow-cooking (dum) in a sealed pot, where the steam from the meat permeates upward through the rice while the rice starches absorb the fragrant meat juices downward, creating a unified yet texturally complex whole.

    chicken in yogurt, biryani masala, ginger-garlic paste, red chili powder, and salt for minimum 4 hours . Meanwhile, sliced onions in ghee over medium heat for 30 minutes until deep golden-brown and crispy (birista). Drain on paper towels.

    Parboil the soaked basmati rice in heavily salted water with whole spices (bay leaf, cardamom, cloves) until it is exactly 70 percent cooked - the grains should still have a firm, slightly raw center. Drain immediately.

    Cook the chicken in the remaining ghee with the whole spices until it is about 80 percent cooked - it will finish cooking during the dum stage.

    In a large heavy-bottomed pot (preferably clay), layer the chicken and its masala on the bottom. Add a generous layer of the parboiled rice. Sprinkle with half the crispy onions, fresh mint, fresh cilantro, and the saffron milk.

    Add a second layer of remaining rice. Top with remaining crispy onions, herbs, and a drizzle of ghee. Seal the pot airtight with aluminum foil pressed firmly around the rim, then the lid pressed down over it.

    Cook over very high heat for 5 minutes to build inside (you will hear a strong sizzle), then reduce to the absolute lowest heat for 25 minutes . The dum cooking is complete. Let rest sealed for 10 minutes before opening. Serve by scooping through all layers to mix.
