    The Syrup. sugar and water with crushed cardamom and saffron until it reaches a 'half-thread' consistency (slightly sticky). Keep it warm.

    The Dough. Rub the khoya and chenna together until perfectly smooth. Mix in the flour gently. Knead into a soft, crack-free dough. Do not overwork.

    The Shape. Form the dough into small, perfectly smooth balls. Any crack will cause them to explode in the hot oil.

    The . Heat ghee over very low heat. Drop the balls in. They must sink and then slowly rise as the heat penetrates. , constantly rotating the oil, until they are an even, dark golden-brown.

    The Saturation. Immediately remove from the ghee and drop the hot balls into the warm syrup. Let them soak for at least 2 hours . They will double in size and become incredibly soft. Serve warm.
