An Italian short-grain rice (*Oryza sativa*) named after the town of Arborio in the Po Valley. Its exterior is rich in amylopectin starch, which dissolves slowly during constant stirring to create the signature, creamy, suspension characteristic of classic risotto, while the interior maintains a firm 'al dente' bite.
