Kosher Salt

A coarse-grained, additive-free salt that features large, irregular, flat crystals. Originally designed for the Jewish dietary practice of dry-brining (koshering) meat, its large surface area draws out moisture effectively and makes it exceptionally easy for chefs to pinch and accurately judge quantities by feel, compared to dense table salt.
