baking powder

A complete chemical leavening agent containing both a base (sodium bicarbonate) and a weak acid. "Double-acting" baking powder reacts twice: first when it dissolves in liquid, and again when exposed to heat, providing a reliable, sustained lift to cakes and quick breads.
