    Place a heavy-bottomed, large skillet (preferably cast iron) over medium heat. Allow the pan to heat for 2 minutes before pouring in the extra virgin olive oil.

    Add the diced yellow onions and red bell peppers to the skillet. Sauté gently, stirring occasionally, until the onions are translucent and the peppers have softened (about 8 to 10 minutes ).

    Clear a small space in the center of the pan and add the minced garlic, ground cumin, sweet paprika, paprika, and harissa paste. Toast the spices in the residual oil for 30 to 60 seconds until highly fragrant. Stir them into the onion and pepper mixture.

    Pour in the crushed tomatoes. Season the mixture with kosher salt and freshly cracked black pepper. Stir well to combine, scraping up any fond at the bottom of the skillet.

    Reduce the heat to medium-low and allow the sauce to uncovered for 10 to 15 minutes . Wait for the tomatoes to break down and the sauce to thicken slightly, creating a rich, cohesive .

    Using the back of a wooden spoon, press four evenly spaced indentations (wells) into the thickened sauce. Crack one room-temperature egg into each well.

    Cover the skillet with a tight-fitting lid. the eggs in the sauce for 5 to 8 minutes , depending on your preferred level of doneness. The egg whites should be completely opaque and set, while the yolks should remain soft and slightly jiggly.

    Remove the skillet from the heat immediately, as the residual heat of the sauce will continue to cook the eggs. Scatter the fresh chopped cilantro and parsley generously over the top.

    Serve immediately from the skillet, accompanied by warm pita bread for dipping and scooping the sauce and runny egg yolks.
