The universal solvent and culinary liquid — mineral content and temperature both matter more than is usually recognized. Ice-cold water relaxes doughs; just-off-boil water extracts tea; room-temperature water shortens rest times in pastry. Recipe measurements assume volumetric consistency — weigh water (1 mL = 1 g) for precision in baking.
