Sesame Oil

An incredibly potent oil pressed from sesame seeds (*Sesamum indicum*). Toasted sesame oil (dark brown) provides a massive burst of savory, nutty pyrazines and should be used exclusively as a finishing oil, while plain sesame oil (pale yellow) is neutral and suitable for cooking.
